A Local Recipe for You to Try

Chicken and Corn Soup

Here is a recipe that I have made, at Cody’s request, about 6 times so far. I found it in the Chinese section of my Malay cookbook. It is simple and yummy.

chicken meat, cut up

1 egg white

3 cups of chicken stock

1 tin of creamed corn

2 tsps salt

1 tsp soy sauce

1 tsp sesame oil

pepper to taste

3 Tbs oil

2 Tbs corn starch

Mince meat and mix with egg white and 3 Tbs of water. Heat oil in pot and add the stock and corn. Mix in salt, soy sauce, sesame oil and pepper. Let mixture boil for a couple of minutes. Thicken the soup by adding the corn starch blended with 3 Tbs of water, stirring the entire time. When the soup is thick and boiling, stir in the chicken meat. Remove the soup from the heat as soon as it boils again. Season and serve with pepper.
